Harvesting happens automatically in September. You just need to have a farmhouse and people assigned to it. Also you need to have fields that have crops ready for harvesting at that time.
I've noticed that the best way to get good yields is to sow everything in oct-nov and then you can take all people away from the farmhouse until next year's harvesting season.
💬Morgen is the size unit of the field and it affects the amount of yield and how long it takes to plow, sow and harvest the field. I usually create three approximately same sized fields for the same crop and then setup circulating crops so I have two fields with the crop and one field on fallow every year alternating the field to fallow.
Easiest way to check the yields of every field is to press the TAB key.
I've only used the burn field if I accidentally sow a field with the wrong crop.
